I created a quick and easy recipe that I made in the instant pot, using zucchini and ingredients I had on hand. It takes about 20 minutes from start to finish. This recipe uses 4 ingredients plus some spices and is quick and easy to make.
Zucchini in the Instant Pot
- 2 Medium Zucchini. (If you have a large zucchini, use 1.)
- 1 TBS. Butter
- 1 TBS Garlic Powder (or fresh garlic clove)
- 1 tsp. Ground Pepper
- Salt to taste
- 1 TBS Italian Seasoning
- 1/4 C. Heavy cream
- 1 Cup. Shredded Colby Jack Cheese
- Bacon Bits (with real bacon, not the fake stuff)
How to make zucchini in the Instant Pot
Clean off the zucchini and slice into coin circles. If you have a large zucchini, cut the circles into half circles if the pieces are too big.
Meanwhile, turn your Instant Pot on Saute, and melt a tablespoon of butter and add garlic cloves or powder. Once that is ready, add your zucchini, salt and pepper.
Once zucchini is heated and warmed, and starting to release some liquid, add a 1/4 Cup of Heavy Cream and mix. Add cheese and Bacon Bits too!
Once the mixture looks tasty and delicious, enjoy. *Caution, it is hot, so you should let it cool.* It will get thicker as it cools.
